Apple Coleslaw

Yields about 6 servings.

Poppy Seed Honey Dressing:
1/4 cup cider vinegar
1 cup mayonnaise
1/3 cup poppy seeds
1/3 cup honey
2 tsp. salt
1 tsp. pepper

1 bag coleslaw mix with carrots
1 bunch scallions, thinly sliced
1/2 cup chopped parsley leaves (optional)
1-2 Fuji apples, peeled, cored, julienne
Dole 5 1/2 oz. Pineapple Tidbits, put in with the juice

Add the dressing ingredients together in a bowl and set aside.

Combine the other ingredients in a bowl.
Pour in the dressing and toss.
Refrigerate for about an hour.
Toss before serving.
