Yields about 4 to 6 servings.
2 pounds gold potatoes (about 6 potatoes)
1/4 cup olive oil
1/2 tsp oregano
1/2 tsp chives
1/2 tsp parsley
Wash potatoes and let dry.
Cut the potatoes into quarters. Some pieces may have to be cut smaller.
Put the potatoes into a large bowl.
Mix the olive oil and spices in a small bowl.
Pour over the potatoes and mix to evenly coat.
Heat the oven to 400.
Pour the potatoes on to a rimmed baking sheet.
Cook the potatoes 40 to 50 minutes, until fork tender.
