Yields about 2 servings.
2 fish fillets, basa, orange roughy or similar
Nonstick cooking spray
1/2 cup crushed cornflakes
1/4 cup shredded Parmesan cheese
2 tbs. butter, melted
2 tbs. lemon juice
pepper
Crush the corn flakes in a small plastic bag.
Thaw fish. Rinse and pat dry with a paper towel.
Coat a Pyrex baking dish with Pam.
Place the fish in the baking dish.
Melt the butter in a small pan.
Heat oven to 450.
In a small bowl combine the cornflakes, cheese, melted butter and lemon juice.
Add pepper to taste.
Pour the cornflakes mixture on the fish.
Bake in the oven at 450 for about 10 to 15 minutes.
Watch carefully so as not to over cook.
