From a recipe by Giada De Laurentiis.
Yields about 4 to 6 servings.
1 pound pasta, orechiette or medium shells
2 tbs. olive oil
1/2 lb. (about 3) turkey sausage, casing removed
1/2 onion, chopped
1 (15 0z.) can cannellini beans, drained and rinsed
2 tbs. chopped, fresh oregano leaves
1/2 cup mascarpone cheese
1 tsp. salt
1/2 tsp. pepper
Cook pasta according to package instructions.
Drain pasta and reserve 1 cup of the liquid.
In a large skillet, heat the oil.
Add the sausage and onion.
Using a wooden spoon, break up the sausage as it browns.
Cook until sausage is browned and the onion tender.
Add the beans and oregano and cook 2 minutes.
Add the cup cooking liquid.
Stir, scrapping up brown bits in the skillet.
Add the mascarpone cheese, stir until dissolved into a sauce.
Add salt and pepper, and the pasta.
Stir until coated. Serve hot.
