From a recipe by Barefoot Contessa.
Yields about 4 servings.
1/4 cup olive oil
4 garlic cloves, finely chopped
1/3 cup dry white wine
grated lemon zest from 2 lemons
lemon juice squeezed from the 2 lemons
2 lemons, sliced
1 1/2 tsp. dried oregano
1/2 tsp. dried thyme
salt and pepper
4 boneless chicken breast, skin on
Heat oven to 400.
Heat olive oil in a small saucepan.
Add garlic and cook for 1 minute.
Remove from the heat.
Add wine, zest, juice, oregano, thyme and 1 tsp. salt.
Spray a 9X13 Pyrex dish with Pam.
Pour the heated mixture into the dish.
Pat chicken breast dry.
Brush breasts with olive oil and sprinkle with salt and pepper.
Put the lemon slices on and around the breasts.
Bake for about 40 minutes until browned and done.
