1 tbs. vegetable oil
1 to 1 1/2 pounds ground sirloin
salt and pepper
1 small onion, chopped
2 tsp. Worcestershire sauce
2 tbs. chili powder
2 tsp. ground cumin
1 8 oz. can tomato sauce
1 large bag yellow corn tortilla chips
10 oz. shredded yellow Cheddar cheese
sour cream
salsa
2 scallions, chopped
3/4 cup black pitted olives, halved or quartered
Chop the onion and scallion.
Heat a skillet over high heat. Add the oil and then the sirloin.
Brown and crumble the meat for about 3 minutes.
Season with salt and pepper to taste.
Add the onion, Worcestershire sauce,chili powder and cumin.
Cook another 3 to 5 minutes.
Add the tomato sauce and simmer for another 5 minutes.
Preheat the oven broiler.
Arrange the chips on a large rimmed baking platter.
Top the chips with the cooked meat sauce and cheese.
Place under the broiler for about 2 minutes.
Remove from the oven and cover the sauce with the sour cream, salsa,
olives and scallions.
