Prep time about 15 minutes.
1 bag baby spinach, stems removed and chopped
1 can chick peas, drained
1/2 medium red onion, finely chopped
1 tbs. balsamic vinegar, eyeball it
3 tbs. extra-virgin olive oil, 3 turns of the bowl
salt and pepper
Combine spinach, chick peas and onion in a bowl.
Add the balsamic vinegar and the olive oil.
Toss well and salt/pepper to taste.
