Yields about 4 servings.
Version 1:
Put some spinach leaves in each salad bowl.
Put slices of avocado in the bowl.
Put slices of red onion in the bowl.
Put slices of grapefruit and oranges on top.
(You can use canned grapefruit and oranges.)
Pour poppy seed dressing on top and serve.
Version 2:
Put some spinach leaves in each salad bowl.
Put slices of avocado in the bowl.
Put slices of red onion in the bowl.
Put slices of hard boiled egg on top with crumbled bacon.
(Cook the eggs and bacon in advance and let cool.)
Pour poppy seed dressing on top and serve.
Version 3:
Put some spinach leaves in each salad bowl.
Put slices of avocado in the bowl.
Add canned Mandarin orange segments.
Sprinkle blue berries and walnut pieces on top.
Sprinkle with sugar. Put in the freezer for 15 minutes.
Pour poppy seed dressing on top and serve.
