Yields about 4 servings.
1 head broccoli, cut into flowerets
You can also use cauliflower, or both.
1 pint sliced mushrooms
2 tbs. peanut oil
1 tsp. red pepper flakes
2 - 3 cloves garlic, chopped
salt and pepper
Simmer broccoli (cauliflower) covered in 1 inch of water in the saute pan.
Simmer until tender, about 7 minutes.
Drain broccoli and return to the pan.
Add mushrooms, oil, peppers and garlic.
Salt and pepper to taste.
Stir until all ingredients are mixed.
Saute for about 7 minutes.
Transfer to a serving dish and serve.
Sprinkle some shredded cheese on top.
