Zucchini - Spiced

Yields about 4 servings.

1 tbs. vegetable oil or olive oil
1/2 tsp. whole cumin seeds
3 to 4 zucchini, cut into 1/2 inch rounds
salt and pepper

Heat the oil in a skillet over medium-high heat.
Add cumin seeds; cook, stirring constantly about 30 seconds.
Add zucchini, reduce heat to medium.
Cook, stirring occasionally until lightly browned and tender, 6 -7 minutes.
Season with salt and pepper.
Serve.
